I have long knew Takeda-hamono produces some of the best some of the best kitchen knives using Aogami Super (AS) steel. Their knife is famous for the long lasting edge with its uniquely attractive rustic look. The history of Takeda Hamono dates back to the 20s, and now is under the 3rd generation master, Shosui Takeda. Even Takeda knives are received well world-wide, they are still keeping a very small operation scale (3 people) and still using very traditional forging and sharpening techniques for all their knives. 

I was lucky enough to meet one of their maker, Yousui, in Osaka. It was where it got started, I look forward to with Takeda Hamono
