Kurosaki KU Cleaver / Large Nakiri 175mm Aogami Super, Stainless Cladding
The unique Kurosaki Chinese cleaver is a very unique knife. Just like all the other Kurosaki knives, this is a stainless cladded knife with the super hard Aogami Super (Blue Super, AS) carbon core.
The knife is grinded super thin behind the edge, and at only 175mm in lenght, it feels very nimble. I like that you can get the same functionality as a normal Chinese cleaver without feeling too large (a Sugimoto 6 is measured at 220x110mm).
This is more of a slicer grind therefore you should not use it to chop bones.
