K&S SPEICAL Jikko Fujiyama Honyaki Gyuto 240mm by Kenichi Shiraki with Two-tone Amboyna handle
This super special Shiraki white steel honyaki is quenched with the Fuji Mountain hamon, comes with the K&S custom profile / grind. I matched this rare blade with our top of the line handle: triple spacer ebony with black horn and stabilized two-tone amboyna handle, and an elegant blackwood saya.
The K&S Special edition honyaki line is a series of new Honykai knives that are exclusively designed by K&S and supplied by top knife brands in Japan. This line aims to work with the best blacksmith and sharpeners in Japan, telling them what is the knife that we, knife enthusiast, truly want. The concept of custom profile, grind and material that are superior than stock offerings are not new at K&S.
We have first worked with Sakai Takayuki for the Sakura wide bevel line, then one of the all time best sellers: Tanaka Nahsiji with great F&F and cutting performance; and more recently the Jikko Akebono line that has super cool profile and unmatched thin, convex grind. Each iteration has improvements added based on customer feedback. As a result, K&S is able to offer a full range of unique knives that not only super affordable, but most importantly, the performs great.
Jikko Shiraki Honykai 240mm
This K&S special edition Sakai Jikko is forged by Kenichi Shiraki and sharpened by Hirosugu Tosa. The knife is based on the success of the Jikko Akebono (实光·曙), and shares the same profile, grind and maker with the Akebono. You can read more about the Akebono here.
Compared with a standard 240mm Sakai style honyaki,
- the custom profile has an edge length of 240+ mm rather than the standard 230mm edge length.
- has a height of 50+mm compared to a much narrower 46mm height
- a gentle curve up with large flat spot, the same profile as the popular Akebono
- much thinner behind the edge
- comes with special K&S handle and saya
